Introducing Chef Dave Formosa…
It’s our pleasure to introduce Chatham-Kent John D. Bradley Convention Centre’s new chef, Dave Formosa.
The heart of any great dining experience lies in the hands of a skilled chef, and Dave is no exception. With an impressive background in crafting memorable meals at renowned establishments like Red Rock Trattoria in Alberta and celebrities on the set of The Last of Us, Chef Dave brings a fresh perspective to Chatham-Kent John D. Bradley Convention Centre. His culinary artistry is fueled by a dedication to using the finest, locally sourced ingredients, ensuring that every dish is a masterpiece of flavor.
We recently sat down with Dave to get to know him and what inspires him as a chef…here’s what he had to say:
What inspired you to become a chef, and how did you embark on your culinary journey?
I started my journey in culinary in 1997 at a local restaurant. However, my inspiration truly hit in 2011 when I met Chef Dimitar, a renowned local chef. He was coming out of retirement to open a new fresh quick service restaurant, using quality ingredients.
Working beside Chef Dimitar for 4 years had grown my love for food and what it could be. From 2016 to 2020 I continued my career in Waterton Park AB, working alongside talented chefs from around the world. From 2020-2023 my creativity side sparked as the head chef for the Red Rock Trattoria, where my team and I achieved and maintained southwestern Alberta’s #1 restaurant for 3 years running.
What excites you most about joining our team and bringing your expertise to CKCC?
It’s exciting to be back in Chatham, and to join a team that shares a passion for guest experience as I do. I am looking forward to the collaboration of ideas and utilizing Chatham-Kent’s agricultural abundance.
Could you tell us about your favorite dish to cook and why it holds a special place in your heart?
I ate so much overcooked roast beef growing up. Fast forward and to me there is nothing better than that first slice off a freshly cook beef roast.
How do you approach creating new dishes or menus, and what factors influence your creative process?
Creativity and presentation are very important to me. I strive for fresh and locally sourced products. Every new dish, mentally creates 30 others as it plays in mind swapping components, changing textures, and developing a flavor profile, once I’m confident it’s ready…. I’ll change it again.
What do you hope customers experience when they taste your food, and what do you aim to evoke with your culinary creations?
I hope our guests experience a wonderful memory, whether it be from the presentation or from the flavors of our dishes. I’m looking forward to connecting with the community and local producers, to create some very exciting CK inspired dishes.
